- DFW natives, attended Rowlett highscool and Joel got his MBA at UTD
- Didn’t grow up on an Orchard
- Don’t have 18th generational recipes
- Instead they utilized the tools of modern man – the internet, a local homebrew shop, and apples from their favorite orchard aka Central Market
- Hard Cider has a heritage that rivals beer. Founding fathers commonly drank it.
- John Adams was actually known for drinking it for breakfast.
- When prohibition came through it got wiped out but recently been making a come back
- There is one problem with most Ciders these days, they rarely fall outside of the spectrum from dry (like champagne) to sweet (like a liquid jolly rancher)
- Bishop cider was fed up with mass-produced hard cider that lacked ingredients of quality and diversity. Which is why they came into existence. Many of their cider utilized ingredients like hops, jalapeno, spices, peaches, pecans, they will try a lot of things, but if their ciders don’t pass the “would you drink this all Day?” test they never make it to mass production or on tap.
- Est. May of 2012 as the First Cidery in North Texas, After a 2.5 year fight with red tape it opened in 2014 in a space in Bishop Arts District now just a tasting room and small production.
- Expanded in October of 2015 to new production facility, known as The Cidercade with 150+ arcade games
